Safety standards

Transparency matters. Kangen Wagyu® partners with established U.S. meat processing companies operating under USDA oversight and complying with regulations enforced by the Food Safety and Inspection Service (FSIS).


Safety compliance standards

  • Processing is conducted at USDA-approved facilities.
  • Products are produced under FSIS oversight and inspected under a USDA Grant of Inspection.
  • Facilities operate under HACCP, SSOP and GMP programs in accordance with USDA regulations.
  • Beef products meet the requirements of the Federal Meat Inspection Act and are fit for human consumption.
  • Ground beef is produced from raw materials tested negative for E. coli O157:H7 using robust sampling methods.
  • Products are not adulterated or misbranded and comply with applicable federal food safety laws.
Important Notice

Handling and safe consumption

Please ensure this product is thoroughly cooked before consumption. Undercooked beef, or beef that has been improperly stored or handled, can cause food poisoning. This matters especially for young children, older adults, pregnant women and anyone with a weakened immune system.

Hygiene

Wash your hands with soap and warm water for at least 20 seconds before and after handling. Clean and sanitize utensils, cutting boards and work surfaces before and after use - 2.5 pH Strong Acidic Water is what Enagic recommends for this.

Avoid cross-contamination

Handle raw meat separately from other foods, with a dedicated board and knife. Do not let meat juices touch anything you are not about to cook.

Cook it through

Always cook to the center. Target 145°F or higher for whole cuts and 159°F or higher for ground beef, measured with a food thermometer.

Storage

Store in the freezer at 0°F or below. Refrigerate cooked beef within two hours. This product ships frozen: freeze immediately on arrival and use within the expiration date, roughly one year.

Thawing

Once thawed, cook the same day. Some liquid loss on thawing is normal. Re-freezing reduces both quality and safety, so thaw only what you will cook.

When not to use it

Do not use the product if there is an unusual odor, discoloration or stickiness.
