The genetics come from Japan: 100% fullblood Kuroge Wagyu, the breed behind almost all of the country's famous beef. The land is Masami Ranch in Corning, California. Crossing the two and raising the herd on Kangen Water® is what makes this American Wagyu in its own right, not a copy of the Japanese original.

What exactly is Kangen Wagyu®?

Kangen Wagyu® is premium American Wagyu. It comes from crossing 100% fullblood Japanese Kuroge Wagyu with high-quality Black Angus, producing an elite F1 generation - a 50/50 cross.

That pairing is the point: the Kuroge side brings the fine, dense marbling Japanese Wagyu is known for, and the Angus side brings the beefier flavor and firmer texture American palates expect. The result is rich without being so fatty that a full steak is too much.

Is it from the United States or Japan?

Both, in the sense that matters. The genetics are Japanese; the cattle are born, raised and processed in the United States, at Masami Ranch in Corning, Northern California.

What does Prime++ mean?

Prime++ is a proprietary Enagic quality designation, not a government grade. It marks cuts selected for exceptional marbling and balanced richness against Enagic standards.

Prime++ is not an official USDA grade and should not be read as one.

How is Wagyu graded in Japan?

The Japanese Meat Grading Association inspects each carcass between the sixth and seventh rib and assigns two grades. Yield Grade (A to C) describes how much usable meat the animal produced. Quality Grade (1 to 5) scores marbling, meat color, fat quality, firmness and texture.

A5 - the grade people quote - is the best possible yield paired with the highest quality score.

How is beef graded in the United States?

The USDA grades on marbling, tenderness and juiciness. USDA Prime is the top grade, awarded to beef with the highest degree of intramuscular fat, which is what produces the rich flavor and tenderness.

How does Kangen Water® actually affect the beef?

The herd is hydrated with pure Kangen Water®, the electrolyzed-reduced water Enagic has produced since 1974. Consistent, high-quality hydration supports the animal through the long grain-finishing period when marbling develops, and that shows up in the tenderness and the fat quality of the finished cut.

It is one input among several - genetics, diet, and low-stress husbandry all matter - but it is the one no other American Wagyu program has.

What are the cattle fed?

A carefully balanced vegetarian diet: grass-fed, then grain-finished. No added hormones, no antibiotics, no growth promotants and no animal byproducts.

How does it arrive, and how should I store it?

Every cut is vacuum-sealed at the source and shipped frozen in custom packaging. Freeze it immediately on arrival and use it within the expiration date, roughly one year.

Once thawed, cook it the same day. Do not refreeze - it costs you both quality and safety.

Where can I buy it?

Kangen Wagyu® is available exclusively in the United States, ordered through your independent Enagic distributor. Distributors outside the US may order it as long as the shipping address is inside the United States.
